Fluffernutter Cookies

Ingredients
  

  • 150 gr All Purpose Flour
  • 1/2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt
  • 130 gr Natural Peanut Butter
  • 85 gr Butter, room temp
  • 75 gr Sugar
  • 75 gr Light Brown Sugar
  • 1 Egg
  • 50 gr Marshmallows, either minis or regular ones torn into bite-sized pieces
  • 100 gr Chopped Chocolate, or Chocolate Chips (dark or semisweet)

Instructions
 

  • Preheat oven to 350°F. Line two baking trays w parchment paper + set aside.
  • In a large mixing bowl, whisk to combine flour, baking powder, baking soda, and salt.
  • In another large mixing bowl, combine the peanut butter, butter, and both sugars. Mix until smooth.
  • Add the egg to the butter mixture and mix until just combined. Add the flour mixture, then add in the marshmallows and chocolate, and mix until thoroughly combined.
  • Scoop or shape the dough into 1.5 oz (3 tbsp) sized dough balls, and place onto the parchment-lined trays. Keep them 2 inches apart.
  • Bake until they're just starting to brown, 12 minutes or so. Then, eat them all.
