Thai Ground Beef Salad

This is a great dish for a dinner party with friends. Make a big bowl of the beef, serve with rice and lettuce leaves for wrapping, have extra herbs and chilies on the side, and have an absolute FEAST.

Ingredients
  

  • 2 lbs Ground Beef
  • 2 cloves Garlic, peeled + minced
  • 2 Small Shallots, peeled + minced
  • 1 Bird's Eye or Jalapeno Chili, seeded + minced
  • 1 Lime, juiced
  • 2 tbsp Fish Sauce
  • 1 tsp Light Brown Sugar
  • 1 tsp Chili Sauce
  • 1 tbsp Oil
  • 1/2 c Chopped Cilantro (or Mint, or Basil)
  • Salt and Pepper, to taste
  • 1 c Chopped Salted Peanuts

To Serve

  • Cooked Rice
  • 1 Large Head Boston or other leafy lettuce, separated into leaves (optional)

Instructions
 

  • In a bowl, mix the beef, garlic, shallots and minced chili. In a small bowl, stir together the lime juice, fish sauce, brown sugar and the 1 tsp of chili sauce.
  • In a skillet, heat the oil. Add the beef mixture and cook over high heat, stirring to break up the meat, until no pink remains, 5 minutes. Remove from the heat and stir in the lime juice mixture. Let stand for 5 minutes. Transfer the meat to a bowl; stir in the cilantro. Season with salt and pepper. Top with the peanuts. Serve with rice, or lettuce leaves for wrapping.
