Trini Macaroni Pie

My girlfriend is from Trinidad, and the moment she introduced me to Trini Macaroni Pie, I was hooked. This is ADDICTIVE, and makes great leftovers, too.

Ingredients
  

  • 2 c Dry Elbow Macaroni
  • 2 large Eggs
  • 2 c Grated Cheddar Cheese
  • 1 1/2 c Evaporated Milk (or normal milk)
  • 4 cloves Garlic, peeled + chopped
  • 1/2 Onion, peeled + chopped
  • 1/2 tbsp Mustard Powder (optional)
  • Chili Sauce (optional)
  • 1/4 tsp Black Pepper
  • 1 tsp Salt
  • 1/2 c Grated Cheddar Cheese (for topping)

Instructions
 

  • Preheat the oven to 350°F.
  • Boil macaroni in water until tender and drain; rinse under cold water for few seconds, then drain thoroughly. Crack the eggs into a bowl and beat until mixed. Combine the macaroni, eggs, cheese, milk, garlic, onion, mustard, chili sauce (if using) and salt + pepper. Mix thoroughly.
  • Pour into a parchment-lined baking dish, sprinkle the additional 1/2 cup cheese over top, and bake at 350°F until firm, about 30 minutes. If it’s not golden-brown on top, broil for a minute or two. Let sit for about 30 minutes before serving. Can be eaten as is, or have it as a side with whatever else you’re eating! Mmmm so damn yummy.
